A Late Menu

Is there anything that you are afraid to cook? For instance, making homemade spaghetti sauce, or cooking a a roast chicken with stuffing, and all the fix’ins doesn’t bother me in the least. But trying to put together a pot of soup I am so lost. So lost in fact I don’t even know where to begin. What if I wanted noodles in my soup? How do I time it all? Does anyone have any soup recipes? I’m thinking of making my very own chicken noodle soup. Chicken, carrots, celery, noodles, maybe a bit of rice (does mushrooms go well with chicken noodle?).  I need soup help.

I’m working a bit backwards this week. I’m telling you my weekly menu plan that has already been eaten this week. As you may or may not have noticed, I also updated the recipe section of my website to flow with this post.

Monday: Chicken Pad Thai — I’ve usually make enough for lunch the next day, but lately the left overs haven’t tasted amazing. In fact, they used to taste even better than the day before. I don’t know what I’m doing wrong. Nothing has changed with my servings or recipe!
Tuesday: Chicken Ceasar Salad Sandwich — this also changed a bit too. Am I getting to be a bad cook with age? What’s going on here! I forgive the fact that I haven’t made this in over a year, so maybe that’s why it tasted a bit different. Not a bad different, but just enough that I noticed it wasn’t the same. Maybe it was the dressing itself. It had pepper bits in it, I think. I was also thinking ahead on Tuesday, since I made cubed chicken breasts for the sandwiches, and knew I was having quiche the next day — I chopped up all veg for the next day, and even cooked an extra chicken breast. So when I got home from the gym on Wednesday everything was already prepped! I must remember to do this more often.
Wednesday: Quiche. It was my first time making quiche for the two of us. Pretty delicious I may add. I didn’t add a crust, or put onions in with it (because those are hurl-worthy). I’ll definitely be making this one again and adding it to the top of my favorites. I love that you can basically add whatever you like to a quiche. Wish I had a pinch of nutmeg to add though. Apparently that makes it taste better, as my Mom claims.
Thursday: PASTA… just with some cheese and sauce.
Friday: Mashed potatoes, carrots, asparagus and pork chops on the grill — easy but yummy supper.

This weekend we can finally take Alfie outside since his second set of shots have “kicked in”, and his little body is immune to some things. We can’t bring him around other dogs until his final and 3rd set, so we’re just going to walk him around the block and hopefully get him tired out, because boy that little guy has a ton of energy!

Blackberry addict to Blueberry eater

Title of the entry? Totally my boyfriend, not me.

Two weeks ago today, I made my first batch of muffins, ever. Can you believe it? I think I’m a natural when it comes to this stuff. Nothing I make turns out un-edible. (I may just be jinxing myself here) or it could be the fact that I’m following super duper easy recipes from BFF’s who bake like pro’s. (Hi Jenna!). I have since made another batch of blueberry muffins and some banana bread. What have I turned into!

Doesn’t it look so gorg? Mmm. I want to make a 3rd batch, maybe banana next time. The top was nice and “pebbely” as the recipe said,  kinda crunchy and I made 12 … they were gone within two days. Seriously folks, and that was trying to limit myself too. I couldn’t help myself. What I don’t get is why my muffin’s don’t have MUFFIN TOPS. Maybe I just need to make less muffins, more batter in each cup. I dunno. We’ll see with if it progresses through my many tries.

I just may have to post this one in the recipe section you guyyyyyys.
