INGREDIENTS
2 Chicken Breasts (Boneless/Skinless)
½ of Red Pepper—chopped
½ of a Tomato—chopped
1 pkg of rice noodles (This is the kind I use)
1 pkg of Pad Thai sauce (Simple, isn’t it! This is what the package looks like)
DIRECTIONS
- Put a pot of water on the boil
- Cook the chicken and cut them into strips
- Open up package of pad thai, dump into the skillet
- Drop in all of the red peppers and simmer
- Boil noodles for 3-4 minutes (they cook very quickly)
- Strain noodles, serve on a plate
- Scoop up chicken, red peppers and sauce, drizzle over noodles
- Top with tomatoes!

I bought a Pad Thai kit at Trader Joe’s a few times… would love to try making it from scratch sometime.
Yum. We LOVE pad thai – but never serve it without crushed peanuts! And a little bit of lime squeezed on top. Mmm. I should put this on the menu for this week. Thanks for the inspiration! :)
