INGREDIENTS
15–ish mini potatoes (I find that the Red Potatoes taste better for roasting)
2 tbsp Extra Virgin Olive Oil
1 tbsp Italian Seasoning
A sprinkle of Salt & Pepper
DIRECTIONS
- Preheat oven to 325ºF
- Cut mini potatoes in half and lay out on baking sheet
- Drizzle oil on the potatoes, add seasonings
- Cook for 1 hour in oven, check half way through so they do not stick to your pan
- Serve with supper!
