INGREDIENTS
4 Italian sausages
2 tbsp oil
¼ tsp red pepper flakes
3 cloves of garlic
1 small head of broccoli
2 small tomatoes
salt and pepper to taste
1bag of penne pasta
Handful of mozzarella
DIRECTIONS
- Put a pot of water on the boil for the penne
- Heat the oil, garlic (pressed) and pepper flakes in a pan over low-medium heat.
- Remove the casings from the sausages and cut into small sections. Add the sausages to the oil once heated. Cook until brown all the way through.
- When the sausages are cooked thoroughly, add the broccoli. Stir-fry until tender, about 5 minutes or so.
- Drain the pasta and toss it with the sausage, broccoli and fresh tomatoes. Season with salt and pepper and top with cheese – I used mozzarella which seemed pretty bland. So maybe some other form of cheese would have been a better choice. But I didn’t want to buy a special cheese just for this recipe.
